Ah, vegetarian Vodka Jelly :) Could be vegan as well since no animal products at all were used...
For this you either need a veggie-gel (have fun finding it!) or use Agar Agar to be able to create the jelly.
(1 Tablespoon of Agar Agar (flaked) equals 1 tablespoon of Gelatin)
300 ml (Vanilla) Absolut Vodka. (Any decent Vodka will do, so picks your choice!)
Flavouring... I used Cola and Strawberry
300ml Water

To start with, measure 200ml of cold water and put it into a saucepan. Add one tablespoon of agar agar and allow to soak through for at least 10 minutes.
Meanwhile, pour 300ml of Vodka into a jug and add an extra 100ml of cold water to it. Stir to mix.
If making rainbow jelly, now is the time to split it up!
Divide the Vodka-Water mixture between 4 bowls. To one bowl, add your choice of flavouring (considering this is mostly Vodka, you don't need to add drop by drop) and some food colouring. For the first I used black/ cola.
To the second bowl add a different colour and the flavouring you intend to use (Strawberry and Red).
Do the same to the third (Strawberry and Pink) and fourth (Strawberry and Orange) bowls.
Now, stir the agar-agar to dissolve it into the water. Once done, pour 100ml into a jug and set aside.
Heat the remaining 100ml of water/ agar agar and boil it for around two minutes. Allow to cool slightly and then add 50ml to the first bowl, and 50ml to a second bowl (which ever you wish to be the first layer of the Vodka Jelly).
Stir in the Agar Agar thoroughly into each bowl. Next pour the first jelly mix into an ice cube tray.
With the second jelly mix, use a spoon to pour a small amount into a shot glass (fill it to about a third). Do this into different shot glasses until the mixture is used up.
Allow the jelly to the set (normally about an hour, although mine took 20 minutes in the fridge)...
Once the first layer has set, heat a further 50 ml of the water/ agar agar mix and allow to boil for a few minutes. Pour and mix into the third bowl of flavoured Vodka/ water. Stir thoroughly to mix it in.
Use a spoon to pour a second layer into the shot glass, and fill it so only a third remains. Do this to all the shot glasses being used.
The last steps is the same as that above. Once the jelly has set, heat the remaining Agar Agar and add it to the last bowl of flavoured vodka. Mix and then add it to the shot glass, filling it up.
I'm just saying that the ratio I used was very potent...
